I am from Ireland, and I obtained my BSc in Human Nutrition and Dietetics, awarded by the University of Chester, in 2009.

In 2011 I completed a PGCert in Sport and Exercise Nutrition in the University of Coventry. I’ve been very fortunate that I’ve been able to work in Wales, New Zealand and Ireland. I’ve been involved in diabetes research looking at putting people with type one diabetes on a low carbohydrate diet. I’ve presented at national conferences, and developed my own weight loss education program.

My passion for nutrition is equal to that of my love for food itself. I’ve just returned from a 6 month trip around the world where I got to eat many wonderful things of which included ginuea pig, lama and truly giant prawns!

After 6 years, I’ve left working the hospital to pursue my dream of running my own nutrition business.

I hope that my knowledge and skills will help to enrich people’s lives so that they can lead healthier and more fulfilling lives.

Couscous with fresh mint, lamb and roasted almonds

Fun foods to make:
Dukka and bread served with olive oil and balsamic vinegar.

Best olive oil I’ve ever had:
Olive oil in Martinborough, New Zealand after we were shown the olive farm and how it was made.

What I order 9 times out of 10 when dining out:
Fish dish.

Favorite hair care product:
Mayonnaise and a hot towel!

Favorite exercise:
Running in the weekly 5km park runs.

Special Interests within nutrition:
Weight management, IBS, diabetes and sports nutrition, pre/post natal.

Special Interests outside of my profession:
Travelling, eating, cooking, and trying (but failing!) to learn Telugu.

I was born and raised in Maine, where the State motto is "The Way Life Should Be," speaking to their beautiful coast line, mountain ranges, farmland, small cobble stone cities, and last but not least, the down-to-earth people. In was trained in NYC completing my MS degree in Clinical Nutrition & Dietetics at NYU. After expat experienes in small town Germany and big city Dubai, I am now residing in Paris with my husband. All things are new.
